Dr Oekter Glycerine is mainly used to soften icing but can also be added to cake recipes where flour is used to create a softer crumb texture. Glycerine is a viscose, clear, colourless liquid with a slightly sweet taste. To prevent royal icing from setting too firm add 1 teaspoon of Glycerine per 500g (1 lb) icing after the icing forms stiff peaks.
